Banana Tray Packaging

Bananas were originally marketed in bunches and the leaves were used as padding to minimize the marking and bruising in transit to markets. In the early 1900s wood cases were introduced, with all of the bananas packed as single fingers, and weighing around 90 LBS.  Eventually the wooden crates were replaced by the cardboard cartons we still see used today. and lately you can find smaller packages that comes in plastic trays.

Once the trailers of newly harvested bunches reach the packing shed, either the top of the trailer, which is demount able, is slid onto a rail like system and pushed into the shed, or the trailer is reversed into the shed

Bunches are then lifted onto an overhead conveyor system using an air ram for easier lifting for the operator. Bunches generally weigh around 75-100 LBS  and each day an operator may lift up to 500 bunches. The bags are removed to be recycled and used for upcoming crops.

The overhead gantry system then takes the bunches through a high pressure wash to clean the fruit.

Next the hands of bananas are removed from the bunch stem in a process called “De-handing”. A special thin, straight bladed De-handing knife is used to remove the hands, which each contain from around 25 to 30 individual bananas or finger from the bunch stalks.

Care is taken at all of the above processes to ensure any “passengers” that come into the shed, especially green tree frogs and tree snakes which like to live in the bunches are not harmed and returned to the plantation. Occasionally, some of these passengers do manage to make a long trip to markets, where they are retrieved and sent to local zoos, or returned to the farm from which they came.

After the hands have been removed, they are cut into clusters of between 3 and 9 individual bananas, to make it easier for retailers and consumers further down the supply chain. It is these clusters that you would be used to seeing at your local retailers.

Once cut from the bunch into clusters, the bananas are placed into a fresh water wash tank, or placed onto a packing wheel, for further cleaning, removing of excess sap.

After the wash, and before bananas get to the packing station they are placed onto a conveyor belt where they are graded, sized and sorted to remove any with deformities, blemishes, cuts, bruises or marks that render them unmarketable. This conveyor belt will take the clusters to the packing stations.

The rejected bananas are put on another conveyor belt and will either become stock feed or be chopped up to be reused as plantation fertilizer.

At the end of the conveyor belts are the packing stations, where packers place clusters into banana trays in preparation for journey to markets. The two most common grades or sizes of bananas are “Large “and “Extra Large”

This ORICS S-30 1×3 system was this candy manufacturer’s heart’s desire. Manually placed, chocolate-filled, heart-shaped trays are placed into the S-30’s carriers. Designed with manual loading in mind, the system is designed to wait until all the carriers are filled, prior to advancing into the heat seal sector (though that feature had been turned off for testing in our facility). This heat seal is one of the best examples of ORICS’ ability to handle unusually shaped trays. In fact, our floating heads design is uniquely appropriate for these unusually shaped trays, ensuring that a positive seal is achieved around the entire perimeter of the tray. Additionally, ORICS’ seal heads ONLY apply heat to the containers’ flange, ensuring that the product inside the trays remains cool and undamaged. This technique also saves you money as we do not heat the entire seal head; only the area directly over the flange.

When ORICS received an Inquiry From Haggai Lavi, C.E.O and Founder of “FALAFAPITA GLUTEN FREE”, Located in Brooklyn, NY,  To Engineer and construct a Machine that will form Falafel balls at a rate of 240 balls per minute, ORICS welcomed the challenge with open arms.
Falafel is made primarily from over night soaked chickpeas and onion. after grinding the chickpeas and the vegetables, the Falafel viscosity is thick and sticky, Traditional Falafel machines are work on the assumption that as long as you extrude the right amount of batter, the falafel will achieve its round shape in the hot oil as it being cooked. In contrast Falafapita wanted ORICS to design and manufacture a Falafel ball Forming Machine that would create a beautiful uniform shape with the falafel batter without having to drop the ball into oil, instead Falafapita wanted to collect the formed balls on a pan where they can then be frozen at their peak of freshness. The frozen falafel balls are then packed and sold as a solution for restaurants who want a ready-made Falafel and for consumers whom prefer their Falafel baked rather than fried.

The results of ORICS engineering and manufacturing is the FFM-8 Falafel forming machine. Forming Falafel Balls at 8 balls per cycle and a maximum of 30 cycle per minute, the FFM-8 is capable of producing240 perfectly formed Falafel Balls per minute. By way of comparison, even the most experienced and skilled person forming falafel balls by hand could only produce 20-30 balls per minute. Additional configurations are available to produce as many, or as few, balls per minute as a manufacturer’s needs may require.

  • It might at first seem a little strange that cheese needs protecting from microbes – after all, microorganisms have a crucial role to play in cheese making. Nevertheless, while some microbes are ‘good’ and useful in cheese making, others are not and can cause cheese to become spoiled. In general, hard cheeses that do not have a high water content are susceptible to attack by moulds, while moister cheeses can be affected by bacteria. Also the fats of some cheeses are prone to oxidation by oxygen in the air, which can make the cheese become rancid.The main gas that is used in modified atmosphere packaging (MAP) to prolong the freshness of hard cheese is carbon dioxide. Hard cheese can be packaged in an atmosphere of total carbon dioxide, while for soft cheeses the proportion is typically between 20 and 40 per cent, with the remainder being usually nitrogen. The main reason for this approach with softer cheeses is that over time the carbon dioxide can dissolve in the water that is within the cheese, and this reduces the volume of gas in the package, eventually causing the packaging to collapse. The presence of the nitrogen prevents the packaging from collapsing.

Fresh produce is more susceptible to disease organisms because of increase in the respiration rate after harvesting. The respiration of fresh fruits and vegetables can be reduced by many preservation techniques. Modified atmospheres (MA), i.e., elevated concentrations of carbon dioxide and reduced levels of oxygen and ethylene, can be useful supplements to provide optimum temperature and relative humidity in maintaining the quality of fresh fruits and vegetables after harvest.

Modified atmosphere packaging (MAP) technology is largely used for minimally processed fruits and vegetables including fresh, “ready-to-use” vegetables.                                                        Extensive research has been done in this research area for many decades. Oxygen, CO2, and N2, are most often used in MAP. The recommended percentage of O2 in a modified atmosphere for fruits and vegetables for both safety and quality falls between 1 and 5%. Although other gases such as nitrous and nitric oxides, sulphur dioxide, ethylene, chlorine, as well as ozone and propylene oxide have also been investigated, they have not been applied commercially due to safety, regulatory, and cost considerations. Successful control of both product respiration and ethylene production and perception by MAP can result in a fruit or vegetable product of high organoleptic quality; however, control of these processes is dependent on temperature control.
